In October, I published an article about my favourite dairy substitutes. You could read about what kind of plant-based milk I like to use, where I buy vegan cheese, what is nutritional yest, or what my favourite ice cream is. Today we will talk again about plant-based alternatives to animal products — but together we will look at egg substitutes.
Unlike milk, the exclusion of eggs by themselves from the diet is not such a big deal. Milk, or dairy products in particular, is a part of many dishes — from sauces to cakes to side dishes — as well as many foods such as chocolate, biscuits or even savory crackers. And since, according to several studies, cheese is one of the foods on which a relatively strong addiction can be grown, and since childhood they have taught us that milk is healthy and very beneficial for the body, giving up these foods is not quite easy. But while not eating hard boiled eggs, scrambled eggs or omelettes is not such a challenge, a major obstacle is the replacement of eggs in cakes or desserts. And after all, we will start missing scrambled eggs just a bit some time. And today we will focus on the best egg substitutes.
Before we talk about the best egg substitute for your favourite cake, there are a few things I have to mention.
1. Never replace more than two eggs in a recipe. In most recipes, eggs serve as glue, something that brings other ingredients together. But if there are more than two eggs in the original recipe, then it also has some other role — it either adds texture, makes the cake spongy, or helps it rise. Unfortunately, none of the vegan alternatives mentioned below will replace this quality.
2. Test the recipe first. As you will find out below, there are several available substitutes and each behaves a little differently — so if you have the time, always try the recipe with the substitute first. And if it doesn’t work out for you, give it a second chance with another alternative. The great-grandmother’s recipe for cakes also took years to improve; and when you suddenly replace an egg with something else, the result may not be like the original.
3. Try originally vegan recipes. From my own experience, I recommend that you find a recipe that doesn’t contain eggs in the first place, rather than replacing the original ones at home. Today, you can find thousands of recipes for vegan desserts on various blogs or YouTube — and I think it’s an easier way.

As I mentioned earlier, there are several ways to replace eggs in sweet recipes with a plant-based and vegan alternative, but they are primarily two groups — seeds and fruits.
Of the seeds are among the proven and most effective either flax or chia. To make an egg from flax seeds, you must crush or grind the seeds first — and then mix them in a ratio of 1 tablespoon of crushed seeds to 3 tablespoons of water. Let it sit for a while; and the mixture changes into a gelatinous consistency that you can mix into the recipe. You can also use chia seeds; but you can use them as a whole, too. The seed egg is great for various cakes, muffins, pancakes, waffles and other desserts.
And from the fruits, you can reach for a banana — after mushing it it will get a similar consistency to an egg (and works great in vegan pancakes — see the recipe in this article); for apple puree, which also serves as a healthier substitute for oil in recipes; or for an avocado — it may seem unexpected, but it will also replace oil in addition to the egg, and in healthy brownies, for example, you won’t even know it’s in it. In general, one egg can be exchanged for 1/4 cup of fruit alternative.
But eggs are also eaten outside of cakes, desserts and sweet treats — as hard-boiled, soft-boiled, scrambled, as an omelet, fried or poached. Here, too, there are several plant-based alternatives — the JUST egg brand has had a great success on the market, selling a blend from which you can quickly and easily prepare scrambled “eggs”. And you can find dozens of recipes on the Internet or on YouTube how to prepare vegan had-boiled eggs at home; but I personally have no experience with them. To be honest, many seem too complicated to me and not worth the difficult preparation.
What is definitely worth trying is tofu scramble, which I showed you already on the blog. The preparation is very simple and you only need tofu and spices such as turmeric, paprika, salt and pepper. Plus, you can easily adjust the tofu scamble to your liking — my favourite combination is with red bell pepper and spring onion!

Dnes sa budeme opäť rozprávať o rastlinných alternatívach živočíšnych produktov — avšak spoločne sa pozrieme na náhrady vajec.
Na rozdiel od mlieka vylúčenie vajíčok ako takých z jedálnička nie je až taký veľký problém. Mlieko, respektíve hlavne mliečne výrobky, sú súčasťou mnohých jedál — od omáčok cez koláče až po prílohy —, a i viacerých potravín ako sú čokolády, keksy, či dokonca slané krekry. A keďže podľa viacerých štúdií patrí syr medzi jedlá, na ktorých sa dá vypestovať pomerne silná závislosť, a už od detstva nám vštepujú, že mlieko je zdravé a veľmi prospešné pre telo, vzdanie sa tieto skupiny nie je úplne jednoduché. Ale ak vás zaujíma, ako prestať jesť mliečne výrobky alebo aspoň ako znížiť ich konzumáciu — na blogu nájdete o tom samostatný článok.
Lenže hoci nejesť vajíčka natvrdo, praženicu alebo omeletu nie je taká výzva, väčšou prekážkou je nahradenie vajec v koláčoch alebo dezertoch. A koniec-koncov aj tá praženica nám po čase začne trošku chýbať. A na tie najlepšie náhrady vajec sa dnes budeme sústrediť.
Ešte predtým, než si povieme ideálnu náhradu vajíčka do vašej obľúbenej torty je potrebné podotknúť pár vecí.
1. Nikdy nenahrádzajte viac ako dva vajíčka v recepte. Vo väčšine receptov slúži vajce ako lepidlo, niečo, čo spojí ostatné ingrediencie dokopy. Ale ak sú v pôvodom recepte viac ako dve vajcia, potom má aj nejakú inú úlohu — buď dodáva štruktúru, nadýchanosť alebo pomáha koláču rásť. Bohužiaľ ani jedna z nižšie spomenutých vegánskych alternatív vám túto vlastnosť nenahradí.
2. Najprv recept otestujte. Ako sa dozviete nižšie, dostupných náhrad je niekoľko a každá sa správa trochu inak — preto ak máte čas, vždy radšej recept s náhradou vajec najprv vyskúšajte. A ak nevyjde podľa vašich predstáv, dajte mu ešte šancu s inou alternatívou. Aj prababičkin recept na bábovku potreboval roky na zdokonalenie; a keď zrazu nahradíte vajíčko niečím iným, výsledok nemusí byť ako originál.
3. Radšej skúšajte priamo vegánske recepty. Z vlastných skúseností vám odporúčam radšej si nájsť recept, ktorý vajíčka neobsahuje, ako doma nahrádzať recepty pôvodné. Dnes už na rôznych blogoch alebo na YouTube nájdete tisíce receptov na vegánske dezerty — a podľa mňa je to jednoduchšia cesta.

Ako som už spomínala, možností, ako nahradiť vajcia v sladkých receptoch rastlinnou a vegánskou alternatívou je viacero, no primárne sa jedná o dve skupiny — o semienka a o ovocie.
Zo semienok patria medzi overené a najúčinnejšie buď ľanové alebo chia. Na vytvorenie vajíčka z ľanových semienok musíte najprv semienka podrviť alebo rozmlieť — a potom ich zmiešate v pomere 1 polievková lyžica drvených semienok k 3 lyžiciam vody. To necháte chvíľu postáť; a zmes získa želatínovú konzistenciu, ktorú môžete primiešať do receptu. Rovnako môžete použiť aj chia semienka; ale tie môžete použiť aj vcelku. Semienkové vajíčko sa skvelo hodí do rôznych koláčov, muffinov, palaciniek, waflí a ďalších dezertov.
Z ovocia môžete siahnuť po banáne — ten po rozpučení získa podobnú konzistenciu ako vajce (a funguje vynikajúco vo vegánskych palacinkách — recept nájdete v tomto článku); po jablkovom pyré, ktoré tiež slúži ako zdravšia náhrada oleja v receptoch; alebo po avokáde — to sa vám môže zdať byť nečakané, ale tiež nahradí okrem vajíčka aj olej, a napríklad v zdravom brownie ani nespoznáte, že v ňom je. Všeobecne platí, že jedno vajce viete zameniť za 1/4 hrnčeka ovocnej alternatívy.
No vajíčka jeme aj mimo koláčov, dezertov a sladkých dobrôt — a to natvrdo, namäkko, ako praženicu, omeletu, volské oko či ako pošírované. Aj tu existuje niekoľko rastlinných alternatív — na trhu získala veľký úspech značka JUST egg, ktorá predáva zmes, z ktorej si doma ľahko a rýchlo pripravíte “praženicu”. A na internete alebo na YouTube nájdete desiatky receptov, ako si pripraviť vegánske vajce natvrdo i doma; no ja osobne s nimi nemám žiadne skúsenosti. Ak mám byť úprimná, mnohé sa mi zdajú až príliš komplikované a nestoja za tú náročnú prípravu.
Čo však určite stojí za vyskúšanie je tofu scramble, ktorý som vám ukazovala už aj na blogu. Príprava je veľmi jednoduchá a potrebujete na to iba tofu a koreniny ako je kurkuma, sladká paprika, soľ a čierne korenie. Plusom je to, že si tofu praženicu viete ľahko upraviť podľa svojej chuti — moja obľúbená kombinácia je s červenou paprikou a jarnou cibuľkou!
